Mediterranean Veggie Sandwich

 
 

INGREDIENTS

  • 1 cup Peppadew Sweet Piquante Peppers, drained, quartered

  • 1 Eggplant, sliced into 1/4" rounds

  • 4 oz Herbed goat cheese, soft

  • 1/4 cup Milk

  • 1 loaf Foccacia bread

  • 1 cup Arugula greens

  • Extra virgin olive oil

  • Salt & pepper


DIRECTIONS

  1. Preheat oven to 450° F

  2. Brush eggplant with olive oil and season with salt and pepper

  3. Arrange eggplant in a single layer on baking sheet and bake until golden and cooked throughout, about 20 minutes

  4. In a small bowl, mix goat cheese with milk. Slice focaccia in half horizontally. Spread both sides with goat cheese spread.

  5. Top bottom half with arugula, followed by eggplant, and peppadew

  6. Close focaccia and slice into individual sandwiches
